I’m not one to be particularly trendy when it comes to what I eat. I just love food. Kale and quinoa and coconut water do not get me excited, and I will never love pretend-alfredo-sauce-made-with-cauliflower. Macaroons are my favorite because they are my favorite. Same thing with Brussel Sprouts. *The following recipe is not an endorsement of the new trend in green vegetables. It’s just my new favorite dinner.

A few months ago, I invited someone to come to my home for dinner really last minute. She was new to the area and I was excited to hear her story. So excited in fact, that I forgot how little food I had in my fridge and cupboards.
My family cook book, Pinterest, Buzz Feed and Food 52 left me inspiration-less as I tried to come up with a meal plan. Every time I saw a dish I liked online, I was out of or short on an ingredient. The possibility of feeding my supposed-to-be new friend frozen peas and Trader Joe’s ice-cream felt very real.

Shortly
after moving to Cambridge, MA I worked as a nanny for a family that lived in
Harvard Business School Housing. Laura, the mother of the family, became one of
my dearest friends. We developed an incredibly comfortable relationship—a
relationship where talking about deeply meaningful things and talking about our
bowel movements both felt totally normal.
