How to Search for Recipes

A few months ago, I invited someone to come to my home for dinner really last minute. She was new to the area and I was excited to hear her story. So excited in fact, that I forgot how little food I had in my fridge and cupboards. 

My family cook book, Pinterest, Buzz Feed and Food 52 left me inspiration-less as I tried to come up with a meal plan. Every time I saw a dish I liked online, I was out of or short on an ingredient. The possibility of feeding my supposed-to-be new friend frozen peas and Trader Joe’s ice-cream felt very real. 

My potatoes were almost gone, I had snacked on my most of carrots, Brandon must have finished off the bacon, and my asparagus was a little on the wilty side. With only an hour to go and no time to run to the store, I remembered a tip my mom’s friend (who has a talent for getting the most out of everything) once shared. When she does not know what to make, she googles three or four ingredients she has in her fridge. No fancy language, no dish description, just ingredients she knows she has in reasonable quantities.

So I tried it. “Onion. Spinach. Parmesan.” 

The result saved my night. I found the perfect dish. Dinner was ready in no time and it took less than two dishes to get there. It smelled divine, looked fancy, and I had enough time to make a quick dessert. Now I make this dish all the time and have fun trying new varieties. I almost always have the ingredients on hand. 

...And caramelized onions. Be still my hungry heart. This dish totally rekindled my love for the glassy brown slimy sweet little bites. 

If you’re in NYC or Boston, have someone caramelize onions for you at Cafe Luxembourg (NYC) in a breakfast omelette, or in a burger at 5 Napkin Burger (NYC and BOS). They are my favorites.
